Black Glutinous Rice Cupcakes









recipe largely adapted from: HoneyBeeSweets
makes about 6 cupcakes (1/2 recipe of hers)

Ingredients:
75g – coconut Milk
25g – fresh milk
63g – black glutinous rice flour
¼ tsp – salt

63g – self raising flour
1 nos – egg
70g – caster sugar
½ tbsp – honey
40g – unsalted butter, melted
20g – cold-pressed coconut oil

Toppings:
Non-dairy whipping cream
Sweeten coconut flakes


Method:
1. Mix coconut milk, fresh milk, black glutinous rice flour and salt in a large bowl. Cover and let it stand at room temperature for 20min.
2. Preheat oven 185C.
3. Add egg, sugar, honey, melted butter and coconut oil to the mixture (1) . Mix till combined.
4. Add flour to (3) and whisk until smooth.
5. Divide batter between cupcakes mould.
6. Bake cupcakes for 18 – 20min.
7. Serve with whipping cream and coconut flakes.
