Purple Yam Country Bread



乌龙的我以为Purple Yam是紫山药,结果就上山下海找寻它,哪知道。。。


原来original食谱里的purple yam其实就是我们熟悉的紫色番薯,
因为生长在不同的国度里,所以名称也就跟着不同了。


尽管如此,这面包我还是用了紫山药来完成。
紫山药的味道和颜色都很清淡,所以我有加了2tsp的紫番薯粉哦。

Ingredients:
Bread Flour – 200g
Purple Sweet Potatoes Powder - 2tsp (for more purplish colour, optional)
Water – 156g
Purple Yam – 75g
Salt – 4g
Instant Yeast – 1g

If using Purple Sweet Potatoes, adjust the water accordingly.


Method:
1. Mix B/F and Water, rest 20 – 30min (autolyse).
2. Add in Purple Yam + Salt + Instant Yeast.
3. Knead by mixer till smooth and elastic, cover and proof till tripled (based on 26C) .
4. Shape the dough, and placed it in heavily-dusted banneton basket.
5. Cover with cling-wrap, slow fermentation in fridge for 12hrs (overnight).
6. The next day, bake at preheat oven of 240C for 30min.
