香烤鸡蛋糕 (with Orange Zest)

FB 和 部落格里很红的一款蛋糕。
做法与戚风蛋糕相似,口感我个人觉得偏干,我女儿却说比戚风好吃。她喜欢咯~~


 第1次用糖粉打发蛋白霜做蛋糕,觉得比用幼砂糖来的更加容易、也较稳定。
有机会一定要用糖粉来做戚风蛋糕,想看看其效果。。。。
 加orange zest是有点画蛇添足啦。。。。
其实是买了鲜甜的Naval Oranges,以为可以用它那鲜美的皮屑 + 香甜的橙汁来做蛋糕,
那晓得原来这食谱是不加任何水份的(又是没有看好食谱咯),
结果橙汁就喂饱了我女儿,而那zest。。就只好加入蛋糕里(不浪费嘛)。

模型
6寸4方活动方模,无需铺蛋糕纸

材料
蛋白 – 3
糖粉 – 65g

蛋黄 – 3
全蛋 – 1
粟米油 – 50g
自发面粉 – 65g
可可paste – 1 tsp
香橙皮屑 - 2tsp (orange zest)

做法
1)将蛋黄与全蛋混匀,再将粟米油倒入拌匀。把面
   粉倒入,用搅拌器搅匀,备用。
2)用搅拌机把蛋白打至大气泡,把糖粉分次加入,
   搅拌至坚挺状。
3)取部分的蛋白霜与面糊混合,再倒入原有的蛋白霜里,混拌均匀。
4)另取少许面糊与可可液拌匀成可可面糊。
5)将剩余面糊倒入模型里,再把可可面糊倒入,用筷子随意搅拌。
6)放入预热烤箱,以150度烤约40分钟。(以我的techno烤箱为参考)
7)蛋糕出炉,倒扣待冷才切片。

  7. When I saw your blog I expected to see those round muffin like cakelet. This cake looks lovely with a combination of cocoa and orange. Bet it taste good too.

  14. Happy belated birthday again! My laptop was sent to upgrade to Window 8.1 since Fri & just picked up today. My ipad is moving like turtle so haven't been visiting anyone's blog until now, only check on my Facebook! By the way, your baked ji dan gao looks tall than mine, ai I baked twice but not have much lucks. Top shrank a little, will share recipe in the future!
