Egg Jellies



 
 
Recipe adapted from: Flavours(Mar2013) magazine with some minor changes
 
Ingredients:
Passion fruits (yellow) layer
6 nos - Passion fruits (yield about 100ml of juices)
30g - caster sugar (do adjust according to your liking)
1tsp - agar agar powder
85ml - water
 
Method:
1. Scope out the Passion fruits seed, drain it and require only the juices.
2. In a small sauce pan, whisk caster sugar, agar agar powder and water before bringing it to a boil.
3. Add in passion fruit juices and remove from heat.
 
Cherry Syrup (red) layer
100ml - cherry syrup (see photo below)
1tsp - agar agar powder
15g - caster sugar
85ml - water
 
Method:
1. In a small sauce pan, whisk caster sugar, agar agar powder and water before bringing it to a boil.
2. Add in cherry syrup and turn off heat.
 
Coconut (white) layer
3tsp - agar agar powder
80g - caster sugar
300ml - water
260ml - thick coconut milk (I used KARA brand coconut cream)
¼ tsp - salt
 
Method:
1. In a sauce pan, whisk caster sugar, agar agar powder and water, and bring it to a boil.
2. Lower the heat, then add in coconut milk and salt. Once mixture comes to a boil, turn off heat.
 
 
To assemble:
1. Place prepared egg-shells on egg rack.
2. Pour coconut agar agar mixture into eggshell till 1/3 full (about 15ml). Leave till completely set.
3. Pour in about 8ml warmed Passion fruit mixture. Leave till completely set.
4. Repeat with warm coconut mixture (about 10ml) followed by warmed Cherry syrup mixture (8ml).
5. Continue layering by alternating coconut (12ml) and Passion fruit (8ml) mixtures.
6. Finally, fill to brim with warmed coconut mixture and leave to set fully.
 
To serve:
Break eggshells and serve chilled.
 
 
Note:
1. One Grade A eggshell has a capacity of about 75ml.
2. I didn't followed the amount showed in this recipe to fill the eggshells as the agar agar mixtures
set very fast, it was a nightmare doing these steps.
 

 
 As you can see, my layering is super lousy!

The agar-agar mixture sets very fast, and I have butter fingers so these really isn't my cups of tea.
I guess these shall be my 1st and last time doing eggshells jellies!! hahaha....^o*

  10. Irene, next time use the egg-shaped silicon mould, think it's easier. The jellies look very colourful! I would like to have the egg jellies + those on the plastic container please!
