Sakura Cookies

6月KL之旅时,好客的Sonia特别做了这款cookies送到hotel来请我们吃。
那一刻我们除了受宠若惊外,就纷纷七手八脚的抢着看这美丽的饼干!!
这饼干不仅仅有美丽的外衣,咬下去更是齿颊留香,真是令我垂涎三尺,难忘到今日!

这里的盐漬樱花和樱花香精是我从香港带回来的,樱花色泽方面会比Sonia的较为逊色,
可能是出产地区的关系吧!加了樱花香精的饼干有多一丝丝的樱花香哦!

漬樱花可以在这里找到I Love Cake (HK), 樱花香精我是在Orange Baking Store买的。


食谱来自:Nasi Lemak LoverDailyDelicious

Ingredients:
90g - Unsalted butter (I used Elle & Vire)
50g - Caster sugar
2-3drop - Sakura essence
A pinch of salt
1no -  Egg yolk
120g - Cake flour ( I used Japanese Violet flour, add till 160g as dough sticky not able to roll out)
16-20pcs - Preserved cherry blossoms (Sakura)
Super fine sugar, for sprinkle on top of the cookies

Method: 
Put the salted Sakura in a bowl, cover with enough water, leave it for 2-6 hours, to reduce the salt from the Sakura.
Drain the Sakura and discard the water.
Beat the butter with salt until soft, add the caster sugar and beat unto light in color, add the Sakura essence and egg yolk, beat to combine.
Pour the flour into the bowl, mix until moisten, then knead lightly until smooth.
Cover with plastic and put in the fridge for 1 hour.
Preheat the oven 200 °C
Line the baking sheet with baking paper or Silpat.
Roll the cookie dough until 5-7mm thickness. Cut with 5.5cm cookie cutter.
Place on a prepared baking sheet, and put Preserved cherry blossoms on each cookie.
Reduce the oven temperature to 150°C (based on my oven)
Put the cookies into the oven and bake for 15 minutes or until golden brown, sprinkle with superfine sugar immediately.
Let the cookies cool on the baking sheet for 15 minutes then let it cool completely on a wire rack.


我说:因为多加40克粉的关系,饼干比较硬有点像shortbread的口感,
比起Sonia的就少了一点酥脆。下次要改用普通面粉来试试哦!

      香港卖的是很小包装的,所以你看到我的饼干有一些没有花瓣的。嘻嘻!!

    我以前在日本试过他们的樱花麻之,没有试出什么樱花味,很好奇樱花的味道是怎样的:)

  16. Wow, so glad you are able to make this sakura cookies. Hong Kong also selling this pickled sakura huh..But i could not find sakura essence here, thatswhy i replace with vanilla extract..
